Lemon Bliss Balls
This delicious snack is gluten and dairy free. Simple to make we love using our KitchenAid Artisan Food Chopper, it wizzes the ingredients into the perfect texture and the bowl is just the right size. We also use our Food Chopper to cut up onion and garlic to avoid tears!
Lemon & Cashew Bliss Balls
Ingredients:
150 grams (1 cup) raw cashew nuts
175 grams (1 cup) Medjool dates pittend (any will do - we used the ones from the bulk bin
45 grams (3/4 cup) unsweetened shredded coconut
40 grams (1/4 cup) chia seeds
Zest from 1 lemon
1 1/2 tablespoons of lemon juice
shredded coconut to roll balls in
Method:
- Pulse cashew nuts in the food chopper until chopped.
- Add the dates, shredded coconut and chia seeds and process until well combined
- Add the lemon zest and juice and pulse until all ingredients form a sort of dough
- With slightly damp hands roll half a tablespoon of the mixture into balls and roll in shredded coconut
You can store bliss balls in an airtight container in the fridge for up to 1 week or in the freezer up to 3 months.
